Arab Fried Fish

Ingredients

4 servings

  • 2lbs (950gms) small to medium fish (sardines, mullets, safi, zu-badi, umma, small sha-rie)
  • 1.1/2 cup fresh lemon juice
  • 6 cloves garlic crushed
  • salt to taste

Preparation

- Wash fish, clean well leaving on heads, make sure scales are all removed and fish degutted.

- Rub with salt. Place on plate, cover with lemon juice and garlic.

- Leave to marinate for 1 to 1 1/2 hours, take from marinade and pat dry.

- Fry in hot oil on both sides until brown, drain and keep hot until ready to eat.
