Arab Shark with Spices

Ingredients
6 servings
- 1 baby shark
- 3-4 onions sliced
- 2 tablespoons loomi (ripe limes boiled in salt water ) or lemon juice
- 1 tablespoon turmeric
- 3 cloves garlic crushed
- 4 fresh tomatoes, finely chopped
- 1/2 cup corn oil
Preparation
- Cut shark into cubes around 5cm (2") square. Place in a medium size soup pot, cover with water and boil until tender - anything up to 1 1/2 hours.
- Keep testing until it is done, remove and drain, de-bone then shred the flesh. Discard the broth. In the same pan, fry the onions in the oil until golden brown, then add loomi, turmeric and garlic and fry gently.
- Add the tomatoes, stir, then add the shark meat and fry gently. A little water may be added at this stage. Cover pan and simmer gently on low heat until dry for 20-25 minutes. Serve hot.
