Ingredients

- 1/2 cup agar-agar gelatine threads
- 5 cups fresh milk
- 1 cup sugar
- rose essence
- red food colouring
Preparation
- Cut up the agar-agar and soak in water overnight.
- The following day, remove the threads from the water and keep in a colander, leave to drain for 10 to 15 minutes.
- Bring the milk, sugar and agar-agar to the boil, reduce heat and simmer for 15 minutes, stirring continuously.
- Remove from heat, add rose essence and the colouring, then whisk gently. The mixture will remain watery, but will quickly firm as it sits.
