Arab Ground Rice Pudding Recipe

Ingredients
4 servings
- 6 cups fresh milk
- 6 heaped tablespoons rice flour
- 6 heaped tablespoons sugar (or more to taste)
- 1/2 teaspoon ground cardamom
- 1/4 teaspoon saffron threads
- 2 tablespoons rose water
- chopped pistachios to garnish
Preparation
- Put milk in a medium saucepan and slowly add rice flour and sugar, stirring until smooth. Whisk a little to aerate and bring to the boil over a low heat, stirring constantly.
- Continue to boil for two to three minutes, remove from heat, blend in the cardamom, saffron and rose water, whisk a little again, then remove from heat and pour into one dish or individual bowls.
- Decorate with pistachios and eventually refrigerate.
