- MEAT
- 1 Kg (2 lb) beef tri-tips - well trimmed
- 1 Kg (2 lb) turkey
- MARINADE
- 1 cup olive oil
- 1/4 cup red wine vinegar
- 2 tablespoon cumin
- 3 tablespoon black pepper
- 2 tablespoon granulated garlic
- Salt to taste
- Ingredients for the green sauce
- 8 bunches parsley stems removed (about 2 cups)
- 8 cup fresh cilantro leaves
- 8 cup olive oil
- 40 garlic cloves, smashed
- Salt to taste
- Freshly-ground black pepper to taste
Preparation
Preparation instructions for the meat
- Marinate the beef and poultry in a large cup for at least 2 hours before cooking.
- Place the beef and turkey on skewers and cook over a hot fire, basting frequently with the marinade. Start with the turkey (it takes the longest.)
- After 6 to 8 minutes, add the beef, cook for another 5 to 8 minutes. Be sure to keep some water available in case of flare-ups.
- Serve with Brazilian Green Sauce (Salsa Verde).
Preparation instructions for the green sauce
- Chop the parsley and cilantro and mix well
-Add the remaining ingredients (garlic and salt), mix well and refrigerate until use.
