Spanish Garlic Mushrooms (Tapas Style)

Ingredients

- 9 tablespoons olive oil
- 1 1/2 lb medium mushrooms, stemmed, quartered
- 12 garlic cloves, peeled and thinly sliced
- 6 teaspoons fresh lemon juice
- 3/4 cup chicken broth or vegetable broth
- 1 1/2 teaspoon spanish paprika
- 3/4 teaspoon crushed red pepper flakes
- salt, to taste
- fresh ground black pepper, to taste
- Garnish
- 1 tablespoon fresh parsley
- 2 lemon slices
Preparation
- In a saute pan, heat the olive oil until hot but not smoking. Saute the garlic for about 3 minute, being careful not to burn!
- Add the mushrooms and cook 5 minutes.
- Add the remaining ingredients except for the parsley and lemon slices and simmer for 5 minutes.
- Garnish with the fresh parsley and serve immediately. Serve with lemon slices.
