Spanish Marinated anchovy - (Boquerones en Vinagre)

Ingredients
10 servings
- 1 kilo of boquerones (anchovies)
- 1 cup vinegar
- 1/4 cup rock salt
- 1/2 cup olive oil
- 1/4 cup finely chopped parsley
- 2 tablespoon. finely chopped garlic
- 1 tablespoon whole black pepper corns
Preparation
1. Clean fish (keep only filets) very well and leave on cold water for at least 4hours. Clean again.
2. Marinate overnight in the vinegar and salt.
3. The following morning discard the liquid. Prepare all the other ingredients (mix them) and add the fish.
4. Mix well and put in bottles. Leave refrigerated for at least 2 weeks before serving.
