Spanish Fresh Cream Choux Pastries - (Bunuelos)

Ingredients
4 servings
- 250 ml water
- a pinch of salt
- 60 g butter
- 125g flour
- 3 eggs
- icing sugar
- fresh double cream (optional)
Preparation
- Put the water, a pinch of salt and the butter in a pan and slowly bring to the boil
- When the water and butter start to boil remove from the heat and add the sifted flour stirring all together with a wooden spoon
- Return to the heat and continue stirring until the mixture forms a ball in the bottom of the pan. Remove from the heat and add the eggs one by one stirring well all the time
- Take small dessert spoonfuls of the mixture and fry on hot olive oil on a when golden, remove and set aside to cool and sprinkle with icing sugar before serving.
- Optionally, you can fill them with cream. To do it, whip the cream until it thickens sufficiently to form a filling for the pastries
Fill the pastries with fresh cream and sprinkle with icing sugar
