Spanish Chicken Rice (Arroz con pollo)

Ingredients
4 servings
- 1 small chicken jointed (cut in medium pieces)
- 4 tbsp olive oil
- 1 small onion
- 1 small green pepper
- 100g mushrooms
- 100g green beans
- 1 tin plum tomatoes
- 250g rice
- 1/2 tsp saffron
- 1 tsp cummin
- 1/2 tsp paprika
- 1/2 tsp thyme
- a few peppercorns
- 1 litre chicken stock
Preparation
- Prepare the vegetables - chop the onion and pepper and parboil the green beans
-Heat the oil in a strong earthenware casserole dish and brown the chicken pieces. When the chicken is almost browned adds the vegetables and continues frying until the onion has softened. Add the tinned tomatoes and rice and stir everything together
-Crush the saffron, paprika, thyme, peppercorns and cummin in a mortar and add to the casserole dish. Add the stock and salt to taste, stir well and simmer slowly until the rice is cooked (10 - 15 mins)
-Remove from the heat and let it sit before serving - garnish with some fresh chopped parsley
