Ingredients
4 servings
- 1/2 kg fresh anchovies
- flour
- 2 eggs (beaten)
- salt
- olive oil
Preparation
- Gut the anchovies and remove the heads then split them lengthways and remove the backbone - wash them under a running tap and drain well. Season with salt
- Dip them in the flour and beaten egg and fry them in hot oil very quickly making sure that they don´t burn
- Serve immmediately
