Spanish Artichokes with Lemon recipe - (Alcachofas con Limon)

Ingredients
2 servings
- 8 artichokes
- 4 tablespoon lemon juice
- 2 cloves of garlic
- 4 tablespoon olive oil
- 2 tablespoon breadcrumbs
- salt and pepper
Preparation
- Remove the rough outer leaves of the artichoke, rub with a little lemon juice and boil in salted water for about 15 mins - remove from the water and drain
- Heat the oil in a frying pan and saute the chopped onion and garlic for a few mins until the onion softens, then add the breadcrumbs and fry for a few more mins until the breadcrumbs become crisp
- Add the lemon juice to the frying pan - season the mixture with salt and pepper
- Place the cooked artichokes on a plate, cut in halves, pour the mixture over them and serve immediately
