Spanish Fried Artichokes - (Alcachofas Fritas)

Ingredients
2 servings
- 4 artichokes
- olive oil
- salt
- 2 cloves of garlic
- lemon juice
Preparation
- Prepare the artichokes by removing the outer layers leaving only the tender middle part - cut of the rough stalk part. Slice the artichokes so that the pieces are very fine
- Heat some olive oil in a frying and add the thinly sliced pieces of artichoke together with the garlic also thinly sliced. Fry the artichoke quickly making sure it doesn´t burn - drain off any excess oil by placing on kitchen paper
- Finally put the sliced artichoke in a serving dish and sprinkle with a little lemon juice and season with salt
