Spanish Tuna Salad with Roasted Red Peppers (ensalada de ventresca con pimientos)

Ingredients

6 servings

  • 2 cans of tuna in olive oil
  • Extra virgin olive oil
  • Vinegar
  • 1 head of green lettuce, torn into small pieces
  • 8 roasted red peppers
  • 2 tbsp chopped parsley
  • Salt

Preparation


- Arrange the lettuce on each plate and place strips of roasted red peppers in the center. Place a large spoonful of the tuna salad on the red peppers.

- Drizzle the salad with oil and vinegar. Salt and garnish with parsley.

- Serve with fresh bread.
