Japanese Soba Salad Recipe

Ingredients

- Dressing
- 1 tablespoon grated fresh ginger
- 2 tablespoons soy sauce
- 2 tablespoons chicken broth or vegetable broth
- 2 tablespoons balsamic vinegar
- 1 tablespoon toasted sesame oil
- 2 tablespoons sugar
- 1/4 teaspoon sriracha sauce (optional)
- Salad
- 9 ounces dried soba noodles
- 6 scallions
- 2 tablespoons toasted sesame seeds (optional)
Preparation
1. To make the dressing, combine the ginger, soy sauce, broth, vinegar, sugar, oil and chili sauce. Allow to rest, unrefrigerated, for an hour to let the flavors mature.
2. Cook the noodles in boiling unsalted water for 6 to 7 minutes. Then drain in a colander and rinse twice.
3. Slice the green and white parts of the scallions very thinly.
4. Combine dressing, noodles, and scallions in a large bowl and toss. Garnish with toasted sesame seeds.
5. Serve either hot or cold.
