Persian Spinach with Yogurt - (Borani Esfanaaj)

Ingredients
6 servings
- fresh spinach, 1 kg
- yogurt, 250 grams
- 2 onions, thinly sliced
- 4 cloves of garlic, finely chopped (optional)
- cooking oil
- salt
- black pepper
Preparation
Wash spinach and cut into small pieces.
Fry the sliced onions and the chopped garlic in oil until slightly golden.
Add to them the spinach and keep it over medium heat until cooked.
Remove the mixture from the frying pan into a bowl and put it in the refrigerator until it cooled down completely.
Add salt and pepper to the yogurt then, beat it well until the yogurt is a free-flowing liquid.
Once the spinach mixture has cooled, add it to the liquid yogurt and mix well. You should get a thick and homogeneous texture.
Serve immediately.
