Ingredients

- potatoes, 1 kg
- eggs, 4-5
- baking powder, 1 spoon
- cooking oil
- salt
- black pepper
Preparation
Cook the potatoes in boiling water then peel and grate them. Let cool completely.
In a bowl, beat eggs well until they become foamy. Add salt, black pepper, baking powder, and the grated potatoes. Mix well.
Heat oil in a non-stick pan until it is hot. Pour in the mixture and flatten its surface, so that you get a circular omelette, and place the lid on.
Reduce heat and cook for about 10 minutes. Then cut the still spongy omelette in 4 equal pieces, turn them over and cook until it is done.
