Turkish Mixed Vegetables with Beef Recipe

Ingredients
2 servings
- 1 medium size eggplant, cut bite size
- 3 medium size white potatoes, cut in pieces
- 4-5 tbsp medium ground beef or 1/2 cup cube beef
- 1 small zucchini, in chunks
- 1 medium size onion, sliced
- 2 garlic cloves, sliced
- 3 fresh green onions, cut in pieces
- 1 cubanelle pepper, chopped. (Cubanelle peppers are light green to yellow colored with a sweet and mild flavor. They are like an elongated bell pepper).
- 1 large tomato or 2 tbsp crushed tomato
- 1/4 cup extra virgin olive oil
- Salt
- Black pepper
Preparation
- Soak the eggplant pieces in water with salt for 15 minutes. After taking them out, squeeze the eggplants to get rid of the water inside. Then dry with paper towels.
- Cook the ground beef or cube beef in a pot until it gets a golden brown colour.
- Then add in the potatoes, onion, salt and pepper and a cup of water. Cook for about 15 minutes on medium heat. Add the rest of the ingredients and continue cooking for another 20-25 minutes. If necessary, add more hot water.
Serve as a main dish with rice on the side .
