Ingredients

- short crust pastry
- 1 cup brown sugar
- 4 Tbs butter, cut into small pieces
- 1 tsp vanilla extract
- 1 cup cold water
- 3 pounds tart apples
Preparation
Preheat the oven to 350° F. Prepare the short crust pastry in advance. Generously butter a tart pan and spread brown sugar evenly. Place butter pieces on the brown sugar. Add the vanilla extract. Sprinkle with cold water.
Peel and core the apples. Cut them in half. Place in the tart pan, close to each other. Heat pan over medium heat to caramelize the sugar. Boil for 20 minutes. As soon as the apples are golden brown, remove the pan from the heat.
Spread the pastry on a large sheet of floured aluminum foil. Form a circle a little bit larger than the tart pan.
Turn the foil sheet upside down over the apples. Remove the foil sheet and tuck down the borders of the crust against the borders of the pan. Bake for 25 minutes.
