French Red Mullet with Basil Recipe

Ingredients
4 servings
- 16 fillets of red mullet,60 to 80g each
- 4 carrots and lemons
- 3 gloves of gartic
- 16 large basil leaves
- 100g of black Greek olives
- 8 fillets of anchovies
- 1 teaspoon of coriander seeds
- 4 tablespoons of olive-oil,salt and pepper
- For the sauce:8 tablespoons of olive-oil,salt,pepper,lemons,;40g of mango cut into smallcubes;40g of apples cut into small cubes;40g of red pepperoni and 40g of green pepperoni cut into small cubes and 40g tomato confit cut into small cubes
Preparation
Peel the garlic and remove the seeds,remove the pips from the olives and pre-heat the oven(THermostat:7 or 210°. Rinse the carrots, cut into thin,round slices and place in a saucepan with two finely chopped cloves of garlic and the coriander seeds.
On two tablespoons of olive-oil,season,half-cover and cook on a low heat for 15 minutes.Mix the anchovies with the olives and the last clove of garlic, then spread this stuffing on eight fillets of red mullet.
Place the remaining eight fillets on top and cover with two large leaves of basil. Arrange the red mullets side by side on a dish and sprinkle with a little olive oil. sprinkle with pepper but no salt then place in the oven for ten or tewelve minutes.
Mash the carrots, then spinkle with olive oil and lemon juice. For the sauce, assemble all the vegetables spinkle with olive oil and lemon juice. Add salt and pepper.
Serving presentation : Place the mash carrots in the middle of the dish arrange the red mullets on top and put on the sauce lightly.
