Ingredients

- 300 g dried beans, medium sized
- 20 g crushed garlic
- 80 ml olive oil
- 50 ml lemon juice
- salt
Preparation
Pick stones and dirt from beans, wash thoroughly , soak overnight in 1 L of cold water.
The next day wash it again and place in a cooking pan, with double its volume of water, bring to a boil, reduce heat and let cook for an hour.
In serving bowl, put salt, add crushed garlic, lemon juice and olive oil and when done add the hot beans ( drained but with a little of cooking liquid), mix well and crush them a little bit with a mortar.
Sprinkle with chopped parsley and olive oil.
