Persian Lamb with fruits

Ingredients

6 servings

  • 1kg (2lb) lean lamb, cubed
  • 2 tablespoons butter or oil
  • 120gr (4oz)peas
  • salt and pepper
  • 500gr (1lb) sour cherries, pitted
  • 1 apple, peeled, cored and diced
  • Lemon juice

Preparation

Turn the meat in hot butter or oil in a large saucepan until lightly coloured all over.
Add the peas and water to cover and season to taste with salt and pepper.
Bring to boil and skim off any scum.
Cover the pan and simmer for about 2 hours, or until the meat is very tender.
Add the cherries, diced apple, lemon juice and a little more water if necessary.
Adjust salt.
Cook for a further 30 minutes.
Served the stew with plain rice
