Persian lentils with peppers and tomatoes

Ingredients
4 servings
- 500 gr (1lb) brown or green lentils
- 3 or 4 tablespoons of oil
- 1 large onion, chopped
- 1 green pepper, chopped
- 1 or 2 chillis finely chopped
- 5 tomatoes, peeled and sliced
- Salta and pepper
- A bunch of parsley or coriander finely chopped
Preparation
Soak the lentils in cold water for at least 1 hour
Drain and boil in fresh water for about 20 minutes until tender
Fry the onion in the oil in a large saucepan until golden
Add the pepper and chillis and saute until softened
Add the drained lentils and tomatoes, salt and pepper and cook gently for about 15 minutes, adding the chopped herbs towards the end of the cooking.
This plate is also very taste served cold!
