Persian spinach with almonds

Ingredients
4 servings
- 1kg (2lb) spinach
- 1 onion, coarsely chopped
- 2 tablespoons oil
- Salt and pepper
- 4 tomatoes, peeled and sliced
- 60 gr (20z) blanched almonds
Preparation
Wash the spinach, remove hard stems and shred if the leaves are large.
Saute the onion in oil until soft, the add the spinach and cook gently, stirring, until it crumples.
Add salt and pepper and the tomatoes and cook until they have softened only slightly.
Toast the almonds and stir them in just before serving
