Lebanese garlic sauce (Zait b'toom)

Ingredients
4 servings
- all cloves of 1 knob of garlic
- 1 teaspoon salt
- about 2 cups olive oil
- about 1/4 cup lemon juice
Preparation
- Crush garlic in the salt with a mortar and pestle until the salt is dissolved.
Very gradually add 1 tablespoon of oil ( a few drops at a time) and then a few drops of lemon juice and, stirring in one direction with the pestle, blend into the garlic.
- When the oil has been completely absorbed into the garlic, very gradually add another tablespoon of oil alternately with a few more drops of lemon juice, continuing until the oil is no longer being absorbed into the garlic (after gradually adding four tablespoons you may use an electric blender)
- The mixture should be light and fluffy like whipped cream. If is not , you can save the day by mixing in a well-mashed potato
