Lebanese fried eggplant (Batinjaan mi'li)

- 1 medium eggplant
- olive oil for frying
- salt and pepper
- juice of 1 lemon
Preparation
- Peel the eggplant, slice in 5 mm circles. Then sprinkle wth salt and allow to drain in a colander for at last 30 minutesor, alternatively, soak in salted water for 1 hour. Drain and dry with atowel or paper towels.
- Fry sliced eggplant in oil until browned on both sides and soft inside. Drain on paper towels.
- Sprinkle with salt, pepper and lemon juice, and serve wam or cold with bread.
