Lebanese eggplant omelette (ljit batinjaan)

Ingredients
4 servings
- 2 small o 1 large eggplant
- 1 onion , finely chopped
- 2 tablespoons olive oil
- 1-2 cloves garlic, crushed
- 6 eggs
- salt and black pepper
Preparation
Peel and cube the eggplant. Then sprinkle with salt and allow to drain in a colander for at least 30 minutes or , alternatively, soak in salted water for 1 hour. Drain and dry with a towel or paper towel.
Fry the chopped onion in the oil until soft and golden. Add the crushed garlic, then the eggplant and saute until tender.
Beat the eggs, season with salt and pepper, and stir into the eggplant mixture. Cook over very low heat until the eggs are set.
Brown the top of the omelette under the griller or slip it onto a plate and return to the pan to cook the other side
