Ingredients

- 1 cup black-eyed peas
- 2 tbsp extra virgin olive oil
- 2 tbsp tomato paste
- 1 cup hot water
- 1 tbsp sugar
- 1 tsp salt
Preparation
- Boil the black-eyed peas in 3-4 cups of water until softened (about 20 minutes). Then wash and drain them.
- Put them in a medium-sized pot with the rest of the ingredients. Cook for about 20-25 minutes on medium heat. Give it a taste towards the end and add more sugar or hot water if necessary.
- Serve while hot with pita bread.
