Pickled black olives

Ingredients

8 servings

  • 2 kg raw black olives
  • 1 cup coarse salt
  • 1/2 cup olive oil
  • 1/2 cup brown vinegar

Preparation

Wash the olives well in lukewarm water. Place in a sterilised glass or eartheware container and cover with water.
Place on top of the olives to prevent them from floating. Cover and leave to soak for 6 days changing the water every day.
Drain the soaked olives and place in a sterilised glass or earthenware container. Ad the salt, olive oil and vinegar and mix well.
Seal with an airtight lid and set aside for apbout 2-4 weeks until the bitter taste disappears
