Lebanese savory rice pudding

Ingredients
8 servings
- 1 cup groud rice, washed and drained
- 5 ups cold water
- 1 cup sugar
- 1 teaspoon aniseed
- 1 teaspoon fennel seeds
- 1 teaspoon caraway seeds
- 2 teaspoon ground cinnamon
- 1/2 cup blanched slivered almonds, for garnish
Preparation
Mix the ground rice to a smooth with some of the cold water. Add the sugar, aniseed, fennel, caraway and cinnamon.
Bring the remaining water to a boil. Add the ground rice mixture gradually, stirring vigorously with a wooden spoon. Continue stirring until it comes to a boil again, them simmer until cooked, about 1 hour.
The mixture is cooked whn it is thik enough to coat the spoon. Let cool slightly, pour into individual bowls and refrigerate.
Serve chilled, garnished with almonds.
