Lebanese dough balls in syrup (Oo'whamat)

Ingredients

- For dough balls
- 3 1/2 cups plain flour
- 1/4 oz (7,5gr) dried yeast or 1/2 oz(15gr) fresh yeast
- 2 1/2 cups lukewarm water
- 1 teaspoon sugar
- nut or corn oil, for friying
- 4 cups sugar syrup
- ground cinnamon
- For sugar syrup
- 3 cups sugar
- 1 1/2 cups water
- 1 tablespoon lemon juice
- 1 teaspoon rosewater or orange blossom water
Preparation

Dissolve sugar in water, add lenon juice and brings to a boil.
Skim the foam from the surface and continue to boil, stirring occasionally until syrup thickens slightly, about 10 minutes. Add the rosewater or orange blossom water towards the end of the ccoking time.
Let syrup stand to cool.
Dough ball in syrup recipe
Warm a mixing bowl and sift hte flour into it.
Dissolve the yeast in 1/4 cup of lukewarmwater, add the suggar and set aside until it rises and foams.
Beat the remaining water into the yeast, thengradually add the flour, beating constatly until the mixture becomes a stcky batter. Cover with a dam cloth and place in a warmspot to rise, about 1hour and 15minutes.
During the first hour beat the mixture vigorously at 15 minutes intervals.
Place 2 in (5 cm) oil in a friying pan and heat until very hot. The dough balls will swell up and float to the top, at which stage you should turn down the heat to medium and keep cooking until they are crisp and golden brown.
Remove the dough balls from the oil, drain on paper towels, and while stil hot immerse briely in cool sugar syrup.
Set aside and sprinkle with cinnamon. Serve hot or cold.
