Ingredients
4 servings
- 2 egg yolks
- 250 gr of olive oil
- half a teaspoon of salt
- 1 teaspoon of white vinegar
- the juice of a lemon
Preparation
Put the yolks in a bowl. Add salt. Beat, with a wooden spoon, for a few minutes, until you see the eggs thcken.
Add the oil drop by drop, stirring until the yolk has absorbed all the oil and you have obtained a perfectly smooth and frothy sauce.
Add the lemon and vinegar continuing to stir until the sauce becomes quite think.
