Chicken with prunes

Ingredients

4 servings

  • 2 large onions
  • 4 large chicken legs
  • oil, salt, pepper
  • 1 teaspoon turmeric
  • 400gr (14oz)yellow prunes
  • 50gr (1 3/4) sultanas
  • 1/2 teaspoon saffron, ground

Preparation

Peel the onions and slice thinly
Wash the chicken legs and cutin two at the joint. In a large pan, heat some oil and sear the chicken pieces all over until the skin is golden. Lift the chicken pieces out and set aside on a plate.
Place the pan back on the heat, add a little more oil, and place over a moderate heat. Add sliced onion and stir-fry for about 3 minutes, until browned.
Sprinkle the turmeric over the onions, add the yellow prunes and fry for about 5 minutes. Add the sultanas and saffron ad de-glaze with 125 ml (4fl oz) boiling water.
Add the chicken pieces, season with salt and pepper, cover and braise for about 5 minutes at moderate heat.
Pour in a further 125ml (4floz) f boiling water, reduce the heat to low, cover and simmer for a good 1 1/2 hours (there should be a scant 250ml (8-9 fl oz) of liquid left in the pan at the end of cooking)
Served with rice
