Persian Melon Juice (Palude)

Ingredients
4 servings
- 1 ripe honeydew melon
- 1 lemon
- 2 tablespoon sugar
- ice-cubes
- 1 spring fresh mint
Preparation
Halve and de-seed the melon. Cut out and quarter a narrow sliver for the garnish.
Scoop the flesh out of both halves with a spoon and transfer to a blender.
Squeeze the lemon. Sprinkle the sugar onto a flat plate. Using tall, thin-walled glasses if possible, dip the rim of the glasses first in the lemon juice, then in the sugar to create a pretty frosted edge.
Coarsely crush the ice-cubes in a clean tea towel with a small hammer and add to the melon flesh in the blender.
Blend thoroughly and carefully pour into the frosted glasses.
Place a piece of melon and a mint leaf on the rim of the glass and serve immediately
