Fried Omelet Balls

Ingredients
4 servings
- 1/2 cup fresh parsley, washed and finely chopped
- 6 eggs
- 1/2 cup finely chopped onion
- 1/4 cup plain flour
- 2 medium zucchini, finely chopped
- 1 sweet pepper, washed and gratted
- 1/2 tsp salt
- 1/4 tsp ground allspice
- 1/4 tsp ground chili pepper
- 1/4 tsp baking powder
- lemon zest
- 2 cups vegetable oil
Preparation
1. Wash chopped parsley and drain well. Mix chopped onions, salt, spices, parsley, chopped sweet pepper, and zucchini.
2. In another bowl, mix flour with baking powder, then add to vegetable mixture. Blend eggs in a separate bowl, stir-in lemon zest. Add the mixture to vegetable mixture and stir.
3. Heat oil in a pan, pour in a spoonful of omelet.
4. Turn over each ball till it is golden-brown from both sides.
5. Serve balls warm with salad and fried potatoes.
