maragu arabic dish


4 servings

  • 5 chunks of meat
  • 2 onion medium size (chopped)
  • 1 madgie cube
  • 1 tomatoe
  • 1 tbspn tomatoe paste
  • 1 tspn cummin
  • 1 tspn arabic mixed spice
  • 1/2 tspn black pepper powder
  • 1 & 1/2 pints of water
  • 3 tbspn ghee
  • small hand of cinnimon sticks
  • 5 cloves of garlic(bashed)
  • Dough
  • 1 cup of plain or number 1 flour
  • 1 tbspn of cooking oil
  • 1/2 tspn of salt
  • water


*put the ghee in the pot when melted add the chopped onion & garlic stir till slighty brown *then add the meat and spices and stir in well for 10 mins then add *then 1 & 1/2 pints of water then put lid on and let it simmer
*Put the flour in a bowl
^*then add the salt
*then add the oil
*then add the water
*then mix all together
*then roll out on a floured board keep rolling till it is thinish then cut into pieces then add directly into the pot stir from time to time for it not to stick to the bottom of the pan .. (i use a non stick pan)also taste it as some ppl like more of the spicies
you can also add a dried lemon if u like into the pot
cooking time: approx 30mins from the time u add the dough
most of the water will be gone but leave some...

Thanks for this recipes I was looking for the one that uses the dough. If you don't have time to make dough too, I have found cutting up labanese bread into pieces works just as well. Another alternative it to use sambosa dough! Thank you*
